Banana Bread, Banana Pudding and More bananas
My wonderful husband brought home a large amount of over-riped bananas. Now, don't get me wrong, I love to eat banana's, I just don't like to smell them. In my early years, I must have gotten sick on them, because I cannot stand the smell of bananas.
Last night I made banana pudding with my mother-in-law's recipe. It is an old recipe that she used and I love it so much better than the instant pudding. I will share it:
Banana Pudding
1/2 cup sugar
2 tablespoons cornstarch
2 cups milk
2 egg yolks
1 teaspoon vanilla
2 or 3 large bananas
1 box vanilla wafers
Mix sugar and cornstarch together in a saucepan. Add milk and stir over medium heat until the mixture boils. Beat the egg yolks and add about 1/4 cup mixture to them in a bowl. Mix well, return to stove and continue heating until thick. Remove from heat and add vanilla. Cool mixture before adding to bananas and vanilla wafers. Lay vanilla wafers on bottom of bowl, cut up a banana and layer on top of wafers, then add cooled pudding. Continue until all pudding is gone with it being the top layer. Refrigerate.
To keep the pudding from having a film on top, cover with plastic wrap while cooling.
You can make a meringue with the egg whites and bake for a few minutes in the oven. If the bananas get warm, they will turn brown and not taste good.
This has been a family favorite for as long as I have been married, and that's a long time. I hope you will enjoy it.
Three loaves of banana bread are in the oven baking. I still have more bananas to use and I suppose I will make another pudding today. With a covered dish dinner at church tomorrow, I guess my hubby will be taking Banana Nut Bread.
I found another banana recipe that I will be trying today also. It has pineapple and coconut in it, our family's favorite foods.
